Beautiful and relaxing Ala Wai Harbor, O'ahu. I love walking or sitting and listening to the boats creak on the water. I yearn to return once COVID restrictions are lifted and inter-island travel is fully open again.

Testing recipes for my favorite soups

I love to take a break from my work schedule to relax and hike at one of my favorite parks on Hawai'i Island, Akaka Falls State Park.

I had a wonderful time experimenting with Chicken Salad, adding Lime Coconut Dressing to a huge Heritage tomato grown on the Hamakua Coast.

This can never happen again! #capitol

Vanilla Cupcakes with fresh raspberries and Lilikoi Butter filling (like lemon curd). There are no words that can properly describe the interplay between the sweet and tart of the lilikoi and the fresh organic raspberries and the vanilla. You simply have to try it yourself.

Verbena’s Fluffy Pancakes with Chocolate Chips and Coconut Syrup. What else needs to be said?

Another beautiful day on Waikiki Beach from our last trip to O'ahu. The colors of these islands, from the sand, to the water, to the sky, never cease to amaze me. I yearn to return once COVID restrictions are lifted and inter-island travel is allowed again.

It was time to get crazy with cast iron for my cooking. If you haven't cooked with cast iron, let me tell you, it is a dream. From a health standpoint, I heard years ago that it will actually add iron to your food. My husband likes it because he says the meals taste better and they clean up easily. Who am I to argue? Don't mess with success.

While daydreaming about our last trip to O'ahu, I pulled up these past pics to share. The beautiful, very pink, historic Royal Hawaiian Hotel is stunning. Built in 1927 on Waikiki Beach, the property has stood the test of time. Whether you are staying there, attending a wedding, or just going for lunch, the garden is wonderful and the beach views memorable. I can't wait to get back. I yearn to return once COVID restrictions are lifted and inter-island travel is allowed again.

If you have never had spaghetti squash, now is the time. My Extra Cheesy Spaghetti Squash is the best way to enjoy it. You start with the squash, whose inside texture and taste will remind you of pasta. Add multiple cheeses, tomato marinara, and fresh basil. Voila! You have a very healthy alternative to a traditionally very starchy meal (pepperoni is optional).

Here is another pic from our last trip to The Honolulu Zoo. It’s a close-up of one of my favorite animals: a zebra. I yearn to return once COVID restrictions are lifted and inter-island travel is allowed again.

I can still taste the succulent lime ginger glaze that I used in the Oven Poached Ono with Tahitian Lime Ginger. The perfectly cooked fish melted in my mouth. Mmmmmm.
